gazpacho

🕑 25 min prep time 🍴 Serves 4

Ingredients

  • ½ cucumber

  • 1 red bell pepper

  • 1 clove garlic

  • ½ fennel bulb

  • 1 red onion

  • 5 strawberries

  • 1 chili pepper (optional)

  • 2 tbsp olive oil

  • A handful of basil leaves

  • Salt and pepper

  • 1 jar of Think Tomato

Instructions

  1. Wash the bell pepper, cut into equal pieces, and remove the seeds.

  2. Wash and cut the cucumber, fennel, and strawberries into equal pieces. Remove the strawberry tops.

  3. Peel and crush the garlic.

  4. Peel and cut the red onion into equal pieces.

  5. Cut the chili pepper in half, remove the seeds, and chop into pieces.

  6. Place all the vegetables and strawberries in a blender together with the basil, olive oil, and Think Tomato sauce. Blend until smooth.

  7. Add a splash of water if the soup is too thick.

  8. Season with salt and pepper to taste.

  9. Optionally garnish with cherry tomatoes and/or small cubes of cucumber.

  10. Serve ice cold.
