Ingredients

300 g orzo

1 jar Think Tomato (flavour of your choice)

500 ml vegetable stock

2 carrots
-
4 sprigs fresh parsley

Dried oregano

1 ball burrata (optional)

Olive oil

Salt and pepper
Instructions

Peel the carrots and cut them into small cubes.

Heat a little olive oil in a pan.

Sauté the carrot cubes over medium heat for 10 minutes, stirring regularly.

Add the orzo and cook briefly, stirring often.

After 5 minutes, pour in the vegetable stock and add the Think Tomato sauce.

Let everything simmer gently, stirring occasionally.

Once the orzo is cooked, taste and adjust the seasoning with oregano, salt and pepper.

Serve with a ball of burrata on top if desired.
