Ingredients

A handful of semi sun-dried tomatoes in olive oil

1 ball of mozzarella

1 jar of Think Tomato Original

10 fresh basil leaves

4 eggs

1 sheet of puff pastry

A handful of pine nuts

Grated Parmesan cheese

Olive oil, salt and pepper
Instructions

Preheat the oven to 180°C (350°F).

Line a baking tin with the puff pastry, press it in neatly, and prick the base with a fork.

Pre-bake the pastry for 5 minutes.

Meanwhile, cut the mozzarella into cubes and finely chop the basil and semi sun-dried tomatoes.

Place the mozzarella, basil, pine nuts, tomatoes, eggs, and the jar of Think Tomato in a bowl.

Mix well and season with salt and pepper.

Pour the mixture over the puff pastry base.

Finish with grated Parmesan cheese.

Bake the quiche in the preheated oven for 30 minutes.
