Ingredients

1 jar of Think Tomato

1 banana, 1 apple

2 pinches Madras curry powder (add more if you like it spicier)

400 ml coconut milk

Basmati rice
For the toppings
-
Chicken, falafel, or scampi

Banana, apple, mango, peanuts, cucumber, spring onion, lemon juice, mango chutney
Instructions

Slice the banana and apple and place them in a large pot.

Add the jar of Think Tomato and the curry powder. Let it simmer for 20 minutes.

Cut the fruit and vegetables for the toppings into pieces and place each in a separate bowl.

After 20 minutes, add the coconut milk and blend everything until smooth using a blender.

Serve the curry sauce with basmati rice and the various toppings.
