spaghetti pulpo

🕑 20 minutes 🍴 Serves 2

Ingredients

  • Fresh octopus (tentacles) for 2 people

  • 2 cloves garlic

  • 1 shallot

  • A handful of fresh coriander (cilantro)

  • 1 small Spanish chili pepper

  • ½ jar of Think Tomato

  • Salt and pepper

  • A splash of white wine

  • Olive oil

Instructions

  1. Wash the fresh octopus, remove any tough parts, finely chop it, and pat dry.

  2. Heat olive oil in a pan and add the garlic, finely chopped chili pepper, and shallot. Let them lightly brown.

  3. Deglaze with a glass of white wine and add ½ vegetable stock cube.

  4. Meanwhile, bring water to a boil for the spaghetti and cook until al dente.

  5. Heat a grill pan and quickly grill the finely chopped octopus. Optionally add the grilling juices to the pan with the garlic and onion.

  6. Combine everything, add ½ jar of Think Tomato and a drizzle of olive oil.

  7. Season generously with freshly ground pepper and finish with a squeeze of lime juice and fresh coriander.
