Ingredients

1 jar of Think Tomato x Basil (for Cru, currently only available there)

100 g grated Grana Padano

4 chicken breasts
-
4 slices Parma ham
-
500 g linguine
-
Olive oil
-
Salt and pepper

Optional: fresh basil, to finish
Instructions

Slice the chicken breasts open horizontally.

Season with salt and pepper.

Place a slice of Parma ham and some grated Grana Padano on one half of each chicken breast.

Fold the chicken breasts closed and secure with a toothpick.

Heat some olive oil over medium heat in a pan.

Add the stuffed chicken breasts and sear until golden on both sides.

Lower the heat, cover the pan, and let the chicken cook through gently.

Meanwhile, cook the linguine according to the package instructions.

Once the chicken is cooked (I always cut one open to check 😉), add the Think Tomato x Basil sauce to the pan and let it simmer gently.

After 5 minutes, remove the chicken breasts from the pan, leaving the sauce behind.

Add the cooked linguine to the sauce together with 4 tablespoons of the pasta cooking water and mix well.

Return the chicken breasts to the pan.

Serve finished with fresh basil if desired.
