Homemade Potato Gnocchi with Think Tomato

Ingredients

  • 1 jar Think Tomato (flavour of your choice)

  • 1 kg floury potatoes

  • 300 g all-purpose flour

  • Olive oil, salt and pepper

Instructions

  1. Preheat the oven to 190°C (375°F).

  2. Wash the potatoes and prick them all over with a fork. Place them in an oven dish.

  3. Drizzle with olive oil and season with salt and pepper.

  4. Bake for about 30 minutes (depending on size), until tender. Check with a fork.

  5. Remove from the oven and let cool slightly.

  6. Cut the potatoes in half and scoop out the flesh (discard the skins).

  7. Pass the potato flesh through a sieve or food mill until very smooth.

  8. Season with salt and add the flour.

  9. Knead into a firm dough.

  10. Bring a large pot of water to the boil.

  11. Divide the dough into 4 equal portions and roll each into a rope about 1.5 cm thick.

  12. Cut into pieces of about 2 cm.

  13. Add the gnocchi to the boiling water. They are cooked when they float to the surface.

  14. Remove with a slotted spoon.

Serve immediately with warm Think Tomato sauce of your choice, or pan-fry briefly in butter first if you like.
