Homemade Potato Gnocchi with Think Tomato
Ingredients

1 jar Think Tomato (flavour of your choice)

1 kg floury potatoes

300 g all-purpose flour

Olive oil, salt and pepper
Instructions

Preheat the oven to 190°C (375°F).

Wash the potatoes and prick them all over with a fork. Place them in an oven dish.

Drizzle with olive oil and season with salt and pepper.

Bake for about 30 minutes (depending on size), until tender. Check with a fork.

Remove from the oven and let cool slightly.

Cut the potatoes in half and scoop out the flesh (discard the skins).

Pass the potato flesh through a sieve or food mill until very smooth.

Season with salt and add the flour.

Knead into a firm dough.

Bring a large pot of water to the boil.

Divide the dough into 4 equal portions and roll each into a rope about 1.5 cm thick.

Cut into pieces of about 2 cm.

Add the gnocchi to the boiling water. They are cooked when they float to the surface.

Remove with a slotted spoon.
Serve immediately with warm Think Tomato sauce of your choice, or pan-fry briefly in butter first if you like.
