Ingredients

1 eggplant

1 zucchini
-
2 potatoes

Fresh oregano
-
500 g mixed minced meat

Mozzarella
-
Olive oil
-
Salt and pepper

2 jars of Think Tomato
Instructions

Cut the zucchini and eggplant into cubes.

Place them in an oven dish, drizzle generously with olive oil, and season with salt and pepper. Toss well.

Place the dish in a preheated oven at 160°C (320°F).

Peel the potatoes and cut them into cubes.

Boil for a few minutes in salted water until just tender.

Cook the minced meat in a pan until done and season with oregano.

Add the Think Tomato sauce to the meat and let it simmer briefly.

Once the potatoes are cooked, add them to the zucchini and eggplant in the oven dish and mix well.

After 15 minutes, add the meat mixture to the oven dish.

Mix everything well and finish with a layer of mozzarella.

Increase the oven temperature to 180°C (350°F) and bake until the mozzarella has melted and all flavours have combined (at least 15 minutes).
