Think Tomato Mussels with Anchovies and Capers

🕑 25 minutes (active time) 🍴 Serves 2

Ingredients

  • 1 kg fresh mussels

  • 2 tbsp capers

  • 10 anchovy fillets (from a tin)

  • 1 medium red onion

  • 1 jar of Think Tomato (perfect with Original, Spicy, Basil or Thyme)

  • Olive oil, salt and pepper

  • Tagliatelle for 2 people

Instructions

  1. Peel the red onion and slice it into half-moons.

  2. Sauté the red onion in olive oil and season with salt and pepper.

  3. Rinse the mussels and let them soak briefly in salted water.

  4. Finely chop the capers and anchovies.

  5. Add the capers and anchovies to the onions and stir well.

  6. Add the mussels and mix everything together.

  7. Pour in the Think Tomato sauce and stir.

  8. Cover with a lid and let simmer for 10 minutes, until the mussels have opened.

  9. Cook the pasta and add it to the mussels, along with a little pasta cooking water.
