Ingredients

1 jar Think Tomato of your choice
(I often use the Thyme or Spicy version for this recipe, but any flavour works perfectly) -
100 g fresh spinach, washed

30 g Parmesan cheese, very finely grated

Olive oil, salt and pepper

300 g salmon
Instructions

Heat a splash of olive oil in a pan.

Season the salmon with salt and pepper and sear for 4 minutes (2 minutes per side).

Add the Think Tomato sauce and let everything simmer for 1 minute.

Stir in the spinach and Parmesan cheese.

Let the dish simmer over medium heat for 15 minutes.

Serve with pasta or bread (or just as it is).
