Think Tomato Salmon with Parmesan Cheese

🕑 30 minutes (active time) 🍴 Serves 2

Ingredients

  • 1 jar Think Tomato of your choice
    (I often use the Thyme or Spicy version for this recipe, but any flavour works perfectly)

  • 100 g fresh spinach, washed

  • 30 g Parmesan cheese, very finely grated

  • Olive oil, salt and pepper

  • 300 g salmon

Instructions

  1. Heat a splash of olive oil in a pan.

  2. Season the salmon with salt and pepper and sear for 4 minutes (2 minutes per side).

  3. Add the Think Tomato sauce and let everything simmer for 1 minute.

  4. Stir in the spinach and Parmesan cheese.

  5. Let the dish simmer over medium heat for 15 minutes.

  6. Serve with pasta or bread (or just as it is).
