Ingredients

4 fresh salmon fillets

A splash of olive oil

50 g chorizo, diced

1 shallot, finely chopped

1 clove garlic, finely chopped

200 ml full-fat cooking cream (Dilea)

150 g Gran Formaggio (Dilea)

400 g Think Tomato sauce

1 tbsp fresh oregano
-
Salt and pepper
Instructions

Fry the chorizo in a little olive oil until crispy. Remove the chorizo from the pan, keeping the oil in the pan.

Sear the salmon fillets in the chorizo oil. Season with salt and pepper, then set aside.

In the same pan, gently sauté the garlic and shallot until soft.

Add the Think Tomato sauce, the Dilea cooking cream, and the Gran Formaggio. Stir well until smooth and creamy.

Return the salmon to the sauce, add the chorizo, and sprinkle with fresh oregano.

Serve immediately.
Tip
Delicious served with a salad of baby spinach and some crusty bread.
