This is a recipe by Louise De Brabandere for Think Tomato

Ingredients

1 onion, peeled and cut into wedges

4 cloves garlic
-
15 g basil leaves
-
75 g semi sun-dried tomatoes, cut into pieces

1 egg
-
25 g breadcrumbs
-
50 g Parmesan cheese, plus extra to serve

1 kg mixed minced meat (pork & beef)

Salt and pepper

2 jars of Think Tomato
Mashed potatoes (or spaghetti), to serve
Instructions

Preheat the oven to 180°C (350°F).

In a small food processor, pulse the onion wedges together with the garlic, basil, and semi sun-dried tomatoes until coarsely chopped. Be careful not to purée.

Add the onion mixture, egg, breadcrumbs, and Parmesan to the minced meat. Season with salt and pepper and mix well by hand.

Shape the mixture into a meatloaf and place it in a large oven dish.

Pour the Think Tomato sauce around the meatloaf and place the dish in the preheated oven.

Bake for about 60 minutes, until fully cooked.

Slice the meatloaf, divide it between plates together with the sauce, and serve with mashed potatoes or spaghetti.
