Ingredients

6–8 fresh gamba prawns

2 cloves garlic

A handful of fresh coriander (cilantro)

1 small Spanish chili pepper (optional, for those who like it hot)

½ jar of Think Tomato
-
Salt and pepper

A splash of white wine

Olive oil
This can also be made on the BBQ!
Instructions

Heat a grill pan. Meanwhile, toss the gamba prawns with olive oil, crushed garlic, plenty of freshly ground pepper, and the chili pepper if using.

When the grill pan is smoking hot, quickly grill the prawns until almost cooked through.

Add ½ jar of Think Tomato and let everything simmer briefly.

Finish with freshly chopped coriander, extra freshly ground pepper, and a squeeze of lime juice.

Serve with fresh bread or tagliatelle.
