Ingredients

1 jar of Think Tomato

200 g white fish
-
1 pack of feta

2 cloves garlic
-
1 bell pepper
-
1 zucchini
-
1 eggplant
-
1 large onion

Fresh oregano
-
Fresh thyme
-
Salt and pepper
Instructions

Cut all the vegetables into fairly large pieces.

Sauté the chopped garlic and onion in olive oil until lightly browned.

Add the remaining vegetables.

Add the fresh thyme and oregano, stir regularly, and keep an eye on the heat.

Once the vegetables are tender, add the Think Tomato sauce and let everything simmer briefly.

Place the white fish in the hot sauce and vegetables and cook until the fish is just done.

Once cooked, finish with crumbled feta and remove the pan from the heat.
Serve with grilled baby potatoes, bread, or couscous.
