Ingredients

600 g mixed minced meat

10 large carrots

1 large white onion

2 jars of Think Tomato

8 g fresh parsley

1 shallot
-
1 clove garlic

1 slice of bread

Olive oil
Instructions

Preheat the oven to 190°C (375°F).

Finely blend the shallot, garlic, bread, and parsley.

Mix this into the minced meat and shape it into a meatloaf (I usually make a long, narrow loaf so it cooks more quickly).

Place the meatloaf in the oven and bake for 30 minutes.

Cut the large onion in half, then slice into half-moons (roughly is fine).

Peel the garlic and slice it.

Heat a splash of olive oil in a large pot, sauté the onion and garlic until translucent, and season with salt and pepper.

Peel the carrots and slice them into rounds.

Add the carrot slices to the pot, cover with a lid, and let everything stew, stirring occasionally.

After about 15 minutes, add the jars of Think Tomato sauce and let the mixture simmer over medium heat.

Once the meatloaf is cooked, add it to the pot and let everything simmer together for another 5 minutes before serving.
Delicious with potatoes or rice!
