I absolutely love tagine. It’s so easy: everything goes into the tagine, lid on, and then you just let it simmer without having to keep an eye on it! Luckily, tagine and Think Tomato are a perfect match 😉
What I also love about tagine is that it’s a great way to use up vegetables that are almost past their best. Together against food waste!
Ingredients

500 g chicken breast, cut into pieces

2 zucchinis
-
2 bell peppers (any colours you like 😉)

1 onion
-
1 clove garlic
-
3 cm piece of ginger
-
7 small potatoes

2 jars of Think Tomato
Instructions

Finely chop the onion and garlic and sauté them in the tagine with some olive oil, salt, and pepper.

Slice the ginger thinly and add it to the onion and garlic.

Add the chicken pieces and brown them over higher heat, stirring regularly.

Cut the zucchinis, bell peppers, potatoes (and any other vegetables you like) into large chunks and add them to the tagine.

Add the two jars of Think Tomato sauce and place the lid on the tagine.

Let everything simmer over medium heat for at least 40 minutes.

Optionally serve with fresh coriander.
