Ingredients

1 sheet of puff pastry

1 jar of Think Tomato Thyme

A handful of sun-dried tomatoes

250 g fresh goat’s cheese

Fresh thyme (about 1 teaspoon)

Egg yolk
Instructions

Preheat the oven to 190°C (375°F).

Chop the sun-dried tomatoes into small pieces.

Place them in a bowl with the fresh goat’s cheese.

Add the fresh thyme and a little pepper (optionally a drizzle of honey) and mix well.

Roll out the puff pastry and cut into squares of about 15 × 15 cm.

Place 2 tablespoons of the goat’s cheese mixture in the centre of each square.

Fold and seal the pastry to enclose the filling.

Place the filled pastries on a baking tray and brush with egg yolk.

Bake in the oven for 15–20 minutes, until golden and puffed.

Meanwhile, gently heat the Think Tomato Thyme sauce.

To serve, spoon some warm Think Tomato Thyme onto each plate and place the puff pastry parcels on top (2 per person).
