Mexican Wraps
Ingredients – Wraps (Dough)

200 g all-purpose flour

125 ml water
-
A pinch of salt
-
1 tbsp oil
Ingredients – Sauce
-
300 g ground beef
-
1 shallot
-
1 tbsp olive oil
-
1 clove garlic
-
1 jar Think Tomato (original or spicy)
-
Fresh coriander and canned corn, to finish

½ tbsp ground cumin
-
½ tbsp paprika powder
-
½ tbsp cayenne pepper
For the Tortillas

Combine all the wrap ingredients and knead the dough for 5 minutes.

Cover with a damp cloth and let rest for 20 minutes.

Divide the dough into 6 equal balls and roll them out thinly.

Heat a pan and cook the tortillas 1 minute per side in a dry pan (no oil).
For the Sauce

Peel and roughly chop the shallot and garlic, then sauté in olive oil.

Season with salt and pepper.

Add the Think Tomato sauce and let it simmer gently.

Stir in the spices and simmer for another 5 minutes over low heat.

In a separate pan, cook the ground beef (no fat needed) until done.
To Serve
Fill each tortilla with:

A generous spoon of sauce

A spoon of ground beef
-
Finish with corn and fresh coriander, to taste
