Stuffed Chicken Breasts with Spinach

🕑 40 minutes 🍴 Serves 4

Ingredients

  • 4 chicken breasts

  • Fresh basil

  • 2 tomatoes

  • Pine nuts

  • 2 balls of mozzarella

  • Spinach

  • Pasta

  • 2 jars of Think Tomato

Instructions

  1. Preheat the oven to 190°C (375°F).

  2. Slice the chicken breasts open and season the inside with salt and pepper.

  3. Place 2 slices of tomato on each chicken breast.

  4. Slice the mozzarella and place 2 slices on each chicken breast.

  5. Add some pine nuts, then close the chicken breasts and tie them securely with kitchen string.

  6. Place the stuffed chicken breasts in an oven dish and drizzle with olive oil.

  7. Bake in the oven for 20 minutes.

  8. Add the Think Tomato sauce and return to the oven for another 10 minutes.

  9. Cook the pasta and sauté the spinach in olive oil, seasoning with salt and pepper.

  10. Add the cooked pasta to the spinach and mix well.

  11. Finish the oven dish with fresh basil.

You can also easily leave out the pasta if you prefer.
