This is a recipe by Louise De Brabandere for Think Tomato

🕑 30 minutes

Ingredients

  • 2 tbsp neutral oil

  • 1 onion, finely chopped

  • 2 cloves garlic, crushed to a paste

  • Salt and pepper

  • A pinch of chili flakes (optional)

  • ½ tsp paprika powder

  • ¼ tsp ground cinnamon

  • 1 tbsp tomato paste

  • 2 jars of Think Tomato

  • 40 g brown sugar

  • 30 ml apple cider vinegar

Instructions

  1. Heat the oil in a saucepan and gently sauté the onion over low heat for 10 minutes, until soft and translucent.

  2. Add the garlic, a generous pinch of salt, pepper, the spices, and the tomato paste. Stir-fry for 2 minutes.

  3. Add the Think Tomato sauce, brown sugar, and apple cider vinegar.

  4. Let the mixture gently simmer over low heat for 45–55 minutes, or until you obtain a thick, concentrated sauce. Stir occasionally.

  5. Remove from the heat and blend until smooth using a blender or immersion blender.

  6. Let the ketchup cool completely and store in a clean, sealed jar or bottle in the refrigerator for up to 1 month.

Enjoy!
