Pan con Tomate with Anchovies, Oregano, Chili and Lemon Zest

🕑 10 minutes 🍴 Serves 4

Ingredients

  • 8 slices of sourdough bread or baguette

  • Extra virgin olive oil

  • 1 jar of Think Tomato

  • Salt and pepper

  • A pinch of chili flakes

  • A pinch of dried oregano

  • 8 salted anchovy fillets

  • Lemon zest

Instructions

  1. Fry the slices of sourdough bread in a generous splash of olive oil until golden brown.

  2. Remove from the pan and spread with a layer of Think Tomato.

  3. Sprinkle with salt, pepper, chili flakes (go easy!), and dried oregano.

  4. Top each slice with an anchovy fillet and finish with freshly grated lemon zest.
