Ingredients

2 nice pieces of cod loin

1 ball of mozzarella

9 vine cherry tomatoes

1 jar of Think Tomato

Fresh basil
-
Salt & pepper

Olive oil

1 fennel bulb
Instructions

Pour the jar of Think Tomato sauce into an oven dish.

Lightly cook the fennel until just tender and arrange the slices on top of the sauce.

Place the cod loins on top of the fennel.

Arrange the vine tomatoes around the fish and finish with slices of mozzarella.

Place the oven dish under the grill for 15 minutes at 180°C (350°F).

Finish with fresh basil leaves.

Serve with baby potatoes.
