Ingredients

250 g pasta

2 avocados

A handful of pine nuts

250 g mozzarella

1 jar of Think Tomato Original

Optional: fresh basil, to finish
Instructions

Cook the pasta according to the package instructions.

Toast the pine nuts in a pan over low heat until lightly golden.

Cut the avocados and mozzarella into bite-sized pieces and place them in a bowl.

Drain the pasta and let it cool slightly.

Add the toasted pine nuts and cooled pasta to the bowl.

Mix everything together and add the jar of Think Tomato.

Season with salt and pepper if needed.

Divide the pasta into portions and finish with fresh basil.
