This recipe is perfect for camping 🙂
Ingredients

200 g pasta (farfalle, penne, …)

1 avocado

A handful of sun-dried tomatoes

1 jar Think Tomato (served cold)

A handful of pine nuts

1 ball mozzarella (or 150 g mini mozzarella balls)

A pinch of salt

1 tbsp oil
-
Optional: fresh basil leaves
Instructions

Bring a pot of water to the boil, season with a pinch of salt and add a splash of oil.

Cook the pasta according to the package instructions.

Peel and dice the avocado. Cut the mozzarella and sun-dried tomatoes into smaller pieces and place everything in a mixing bowl.

Add the pine nuts to the bowl.

Once the pasta is cooked, drain and let it cool slightly.

Add the lukewarm pasta to the other ingredients.

Pour in the cold Think Tomato sauce and mix well.

Finish with fresh basil if desired.
