Ingredients

700 g turkey breast

8 slices Parma ham

8 sage leaves

150 ml white wine or Marsala

Black pepper

2 tbsp butter

500 g cherry tomatoes

2 tbsp olive oil, salt and pepper

400 g paccheri pasta
-
2 jars of Think Tomato
-
A handful of arugula
Instructions

Cut the turkey breast into 8 equal pieces.

Place plastic wrap over each piece and pound the meat thinner using a meat mallet or rolling pin.

Place a slice of Parma ham and a sage leaf on each piece of turkey.

Secure the ham and sage to the meat with a toothpick.

Place the cherry tomatoes on a baking tray, drizzle with olive oil, and season with salt and pepper.

Roast the tomatoes in the oven for 10 minutes.

Heat the butter in a large pan and cook the saltimbocca for 2–3 minutes per side.

Deglaze with the white wine or Marsala and add the Think Tomato sauce.

Let everything simmer for 3 minutes. Season well with salt and pepper.

Meanwhile, cook the paccheri pasta according to the package instructions.

Serve the saltimbocca and pasta on a platter with the roasted cherry tomatoes.

Finish with a handful of fresh arugula.
