scampi's met kokosmelk à la Carla!

Coconut Milk Scampi à la Carla

🕑 30 minutes 🍴 Serves 2

Ingredients

  • 12 jumbo scampi (large prawns)

  • 250 ml coconut milk

  • 1 jar of Think Tomato

  • Parsley, for garnish

  • Pasta or rice (both are delicious!)

  • Optional: Vegeta (Turkish-style seasoning blend)

  • Salt & pepper

Instructions

  1. Cook the scampi in a pan with a knob of butter.

  2. Season with Vegeta or simply with salt and pepper.

  3. Once the scampi are cooked, add the coconut milk.

  4. Stir to loosen the browned bits from the pan and let everything gently simmer over low heat.

  5. After 5 minutes, add the Think Tomato sauce and let it reduce slightly over medium heat.

  6. Finish with fresh parsley and serve with pasta or rice.
