1 jar of Think Tomato

15 g ginger

1 sweet potato

150 g red lentils

1 teaspoon red curry paste

1 tablespoon peanut butter

A few mint leaves

Salt and pepper
Instructions

Rinse the sweet potato.

Place it in an oven dish and bake in the oven for 45 minutes.

Meanwhile, rinse the red lentils and let them drain.

Peel and grate the ginger.

Sauté the ginger in a little oil.

Add the lentils, Think Tomato, peanut butter, and curry paste, and let everything gently simmer until the lentils are cooked.

Season with salt and pepper.

Slice the sweet potato open and spoon the lentil mixture over it.

Finish with a few mint leaves.
