Ingredients

1 jar of Think Tomato

1 sheet of puff pastry

1 ball of buffalo mozzarella

1 bunch of green asparagus
-
Lemon zest
-
Za’atar (optional)

Fresh mint

Egg yolk
Instructions

Roll out the puff pastry.

Spread the Think Tomato sauce evenly over the pastry, leaving the edges free.

Top the sauce with slices of mozzarella.

Remove the woody ends of the asparagus and place the spears on top of the mozzarella.

Drizzle with a little olive oil and grate some lemon zest over the top.

Fold the edges of the pastry over, brush them with egg yolk for a golden crust, and sprinkle with za’atar if using.

Bake in the oven at 180°C (350°F) until the mozzarella is bubbling and the edges are golden brown.

Serve topped with fresh mint.
