Ingredients

1 eggplant

½ butternut squash + 4 carrots

A handful of raisins

1 can of chickpeas

A handful of fresh coriander (cilantro)

Optional: tagine spice mix

1 jar of Think Tomato

Falafel
Instructions

Roughly chop all the vegetables.

Heat the tagine over low heat, add some olive oil, and gently sauté the vegetables.

Stir everything briefly and let it simmer over low heat for about 15 minutes.

Add the tagine spices, Think Tomato sauce, and raisins, then let everything simmer a little longer.

Add the falafel and fresh coriander at the end.

Serve with pre-cooked couscous and harissa, if you like.
